


Our prices are based on the size
or your particular event, and menu options chosen. They generally include
two meat selections, two sides, bread or buns, and dessert. All
plates, napkins, utensils, associated condiments and sauces are also
provided. We are proud to offer:
Meats
Beef Brisket
The undisputed “King
of BBQ” in
Texas! We rub ours with authentic, sweet and sassy “Texas
BBQ Rub®” and slow smoke it to tender perfection. Served
sliced and chopped with sauce on the side.
Pulled/Chopped Pork
In the Carolinas they
favor this flavorful, ”fallin-apart tender” contribution
of the pig! We cook it “low and slow” using our own spice
rub and serve it with sauce and buns on the side. Eat it the way
they do in Dixie; with the cole-slaw on top of the sandwich!
Or just eat it plain!
Spare Ribs
“These are not your grandmas ribs!” We
start with whole spares, trim them “St Louis Style,” rub
them generously with Texas BBQ Rub® and then baby them with
6-7 hours of indirect heat and woodsmoke before finishing
them with our own sweet-spicy sauce. The result is a meatier,
juicier (slightly messier) rib with a beautiful pink “smoke
ring” inside. You will love these ribs!
Pork Loin
Whole pork loin. Rubbed and
smoked until done “just right!” This will be the most
flavorful pork loin you ever ate! (Note: We
will not overcook pork loin. It will be slightly “pink” inside. This is considered “safe
practice” with this cut of meat today.)
Chicken
“Yard-bird” in Texas. We do thighs
or legs. Rubbed and slow smoked using apple, cherry and
maple hardwoods. Sauce is served on the side (note:
the skin will not be “crispy” on chicken prepared in this manner
and the smoke will cause it to have a pink appearance called a “smoke
ring.” We assure you that it is fully cooked!)
Sausage
Old World Fresh sausages smoked
and served with buns or tortillas.
Salmon
Farm raised pink salmon rubbed with
soy sauce and Texas BBQ Rub® Slow cooked for a delicate and flavorful
alternative to red-meat based bbq.
Sides
Cowboy
Beans
Pinto Beans cooked “ western
style” with onions, green peppers, chiles and ham
hocks. A wonderful compliment to Brisket or Pork.
Baked Beans
Northern beans Dutch-Oven
baked right in our pit for hours in a sauce redolent with pork,
tomato, mustard, onion, brown sugar and our own secret spice blend.
An old family favorite!
Redskin Taters
In a butter / herb sauce

Baked Taters
Foil baked in the pit and
served with butter and sour cream.
Creamy Cole Slaw
“Highly Recommended” as
an accompaniment to good BBQ! Goes great on a Pulled Pork Sandwich!
Garden Salad
Greens tossed with a variety
of dressings.
White Bean / Chipotle Salad
A great
cold bean salad of northern beans, scallions and smoked chipotle chiles
in a white wine / mustard vinaigrette. A wonderful accompaniment
to chicken or fish.
Other
Smoked Cheese Grits, Turnip, Collard,
or Mustard Greens, Double Smoked Ham and Prime Rib.
Sauce
Our sauce is our own. It is a traditional “Kansas
City Style “ sweet, spicy, tomato based sauce. Upon special
request we can also do mustard or vinegar based “Carolina
Style” sauces.
Desserts
A wide variety of cakes, pies,
brownies and pastries designed to please everyone and provide a sweet “finish” to
your meal.
